One of the big gregory packs is overkill for any of those trails if you aren't trying to haul two weeks worth of food. I use a gossamer gear mariposa for up to a week-long solo trip, carrying a bear canister, which comes in at around 4,000 cc, and weighs around a pound. Of course, to fit your gear and get your load down to around the 30 pound top limit of that pack you have to think of your gear in terms of a system, and optimize in terms of the items you pack, their weight and volume.
FWIW, I do have one of the large-ish gregory packs from the days where I served as a pack mule for young scouts. It's a pretty good pack for what it is, but I haven't carried it in years because of the weight.
